Due to COVID-19 please allow more time to process your order and for delivery. Please be mindful of this when ordering perishables if you live out of town. During Level 4 Lock Down Period we we are open Monday-Friday 9am-4.30pm and closed at the weekend. At the moment for any new orders placed we please ask you only order Fresh Produce, Fruit & Vege Boxes, Flour, Yeast, Milk, Bread and Eggs which we have access to more readily, while we wait for other stock to arrive. Orders that contain any other products that are not listed above will not be sent until stock has arrived.

Zucchini Slice

This is such a simple, healthy and filling recipe for dinner, lunch or snack!  You can also add other vegetables such as carrot, corn or tomatoes so it’s also great for using up whatever’s left in the fridge at the end of the week.

Ingredients:

  • 4 Zucchinis

  • 1 large Onion

  • 3 rashers Bacon

  • 1 Cup Grated Cheese

  • 1 Cup self raising flour (use Gluten Free self raising flour if required)

  • 1/3 C Olive Oil

  • 5 eggs beaten

  • Salt and pepper

 Method

  1. Grate Zucchinis

  2. Combine all ingredients, don’t overmix

  3. Pour into greased dish

  4. Bake 30-40 mins until brown

You can also put the mixture into muffin tins or mini muffin tins which are ideal for kids lunches or snacks! This also makes it easier to freeze batches so you can pull one out of the freezer if you're short of time when making school lunches or dinners.
