Gluten Free Hot Cross Buns
Nothing says Easter more than a taste of a good old Hot Cross Bun! Particularly this recipe that is Gluten Free so can be enjoyed by those who aren't able to eat gluten.
Ingredients:

2 heaped tsp instant active yeast

3 1/4 C gluten free bread mix

2 Tbsp butter

1 3/4 C tepid water

1/4 C sugar

2 tsp cinnamon

2 eggs
-
pinch salt
-
2 tsp mixed spice
-
1/2 tsp nutmeg
Glaze:
-
1/2 C warm water
-
2 Tbsp sugar
Cross Mix:
-
1 C Gluten Free icing sugar
-
1 tsp water
-
2 tsp lemon juice
Method:
1. Dissolve yeast in the tepid water.
2. Sift the gluten free bread mix and spices together and place in a large mixing bowl.
3. Cut in butter until a fine crumb forms.
4. Add salt, sugar, eggs, sultanas and yeast mixture. Using an electric beater fitted with dough hooks, mix on a medium speed for 5 minutes.
5. Using a tablespoon, place generous round mounds on a greased baking tray. Let ithem stand in a warm moist place for 45-50 minutes.
6. Bake at 200 degrees celcius for approximately 10-12 minutes or until done.
7. Brush with the glaze mix while still warm.
8. Allow to cool then mix the cross mix ingredients together and pipe over each bun.
