Fresh Vege & Black Bean Salad
Liko one of our star staff members whipped up this quick, nutritious lunch today and we thought we'd share it with you! It contains canned black beans. Who doesn't have a can of these, unused and lurking in their pantry!
Black Beans are excellent sources of dietary fibre, protein, B vitamins and many other important vitamins and minerals. There is good evidence that they can help reduce blood sugar, improve cholesterol levels and help maintain a healthy gut

Ingredients:
Kakanui Tomatoes
Red Onion
Cucumber
Runner Beans
Avocado
Ceres Canned Black Beans
Ceres Mediterranean Capers
Basil
Chemoula Dressing (modified from the Revive Cookbook)
Chemoula Dressing Ingredients:
1/2t Chantal Sea Salt
1T Braggs Apple Cider Vinegar
3 Cloves Garlic
2t Ground Cumin
2t Ground Turmeric
1t Crushed Chilli
1C Olive Oil
1/4C room temperature water
2t cumin seeds (optional)
Method:
1. Chop up all vegetables
2. Put runner beans in a colander and pour over with hot water then cold to soften. Chop and add to other vegetables
3. Drain and rinse black beans. Add to vegetables.
4. Make the Chemoula Dressing. Blend all dressing ingredients (except oil, water and seeds). While blending, slowly add oil and then add water at the end until desired consistency is reached. Mix in cumin seeds.
5. Pour dressing over other ingredients and mix through.
