Easy Bliss Balls

These Bliss Balls are super quick and easy to make, taking only 10 minutes! They're great for school lunches and snacks. They're also Dairy Free, Gluten Free and Vegetarian. 

Ingredients:

1 C natural almonds

1/2 C natural walnuts

200g medjool dates, pitted and chopped

1/2 C chopped dried apricots or raisins

2 T flaxseeds 

1 t ground cinnamon

2 T cacao or cocoa powder

1/2 desiccated coconut to coat 

Method:

1. Place nuts in the bowl of a food processor. Pulse to grind then add the dates, apricots, flasseeds, cinnamon and coaco powder and process until the mixture sticks together and forms a thick textured paste. 

2. Scrape mixture from the processor into a bowl. Shape into 20 walnut sized balls (you can make them however big or small you like though!) and place on a tray lined with baking paper. Chill for 1 hour or until firm.

3. Roll the Bliss Balls in coconut to coat. 

You can also coat them in other garnishings like freeze dried powders, or nuts and seeds- just whatever tickles your fancy!
