More Or Less Vinaigrette 250ml

When More Or Less looked at developing some new vinaigrettes they asked themselves a couple of questions. What can we take out to make them healthier? And what can we add that will add variety to our customers’ meals. Something they might not have tried before that is easy to add and is good for them?

They’ve roughly halved the kilojoules by trimming the olive oil and eliminating added sugar. By the way, we don’t have anything against olive oil; it’s one of those good oils that are actually better for you. But if you’re watching the kilojoules (or calories!) then oils generally are something to watch out for. For sweetness we’ve used stevia so you don’t have to worry about those sneaky little carbs other than the ones that occur naturally in the berry juice. So now you can pour this vinaigrette generously onto your salads and feel good about it.

Flaxseed and Berry

Reducing the sugar and oil was easy. Adding flax seed was a natural progression. Initially hard and crunchy, when you soak flax seeds they soften and swell to add texture, visual interest and goodness to your food and drinks.

And berries taste amazing, bring their own natural sweetness with them, and are widely regarded as superfruits being high in a variety of fibre, vitamin C, vitamin K, folic acid and manganese. They also rank well for antioxidant strength, with notable levels of polyphenolic compounds.

So the combination of berries, olive oil and flax seeds has created a vinaigrette that is not only tasty but contains less sugar and is high in a range of benefits from a wide variety of foods.

Chia Seed and Grape

Adding chia was truly inspired. When you soak chia it forms lovely little bubbles, a bit like sago and gives the vinaigrette a lovely pulpy texture which looks and tastes amazing.
