Mixed Nut Butter

We love Nut Butters! However, most store bought peanut butter is full of ingredients you should try to avoid, like sugars and hydrogenated vegetable oils. Making your own has huge benefits as you can control the ingredients.

This mixed nut butter is a lovley twist on classic nut butters. It's packed with healthy fat and protein which help fill you up and keep you satisfied! Use it in smoothies, on sandwiches/crackers, and occasionally when no one is looking by the spoonful.

Ingredients 
- 1/2 cup hazelnuts
- 1/2 cup almonds 
- 1/2 cup cashews
- 1/4 cup sunflower seeds
- Pinch of sea salt  

Method 
Preheat oven to 180c.

Place the nuts and seeds on a baking tray and bake for 10 minutes until golden. Once cooked, remove and leave to cool to room temperature. Roasting the almonds first helps them to release their natural oils which then helps it turn into a really smooth and creamy consistency.

When the nuts and seeds have cooled, place them in a food processor and blend for around 15 minutes until a smooth mixture forms, adding in the salt in the last few minutes. You need to keep blitzing the almonds in the food processor for quite a while. It can take up to 15 minutes! Make sure you're using a good quality high powered machine too.

We love the combination of hazelnuts, almonds, cashews and sunflower seeds. You can mix any kinds of nuts and seeds depending on your budget – pumpkin seeds, walnuts, peanuts and pistachios are all fantastic options. You can make a big jar of this of this and keep it in the fridge for up to 2 weeks to enjoy!

Note: you really do need a food processor to make this, we recommend not doing it in a blender as it can break them.
